Mexican Cauliflower Rice



  • 20 oz. cauliflower rice 

  • 2 tablespoon olive oil

  • 1/2 small onion (finely chopped)

  • 1 garlic clove (minced)

  • 1 tablespoon diced jalapeños

  • 1 tomato (finely chopped)

  • 3/4 cup roasted red peppers (diced)

  • 1 tablespoon chopped cilantro

  • Salt and pepper to taste

  • Juice of 1/2 lime

  • More cilantro, sliced avocados, jalapenos, limes for topping


1. Heat oil in a pan and add onions, garlic, red peppers and jalapeños. Stir fry for a few minutes until the onion is translucent and the garlic is fragrant.

2. Add tomatoes, cumin powder, and salt to the pan. Cook the tomatoes until they soften. Add the cauliflower rice to the pan and mix well. Stir fry for approximately 3-4 minutes until the rice is tender.

3. Top with your favorite toppings and serve hot.
